A simple knit with eyelets and dropped stitches knitted flat and with one single seam to make it into the poncho. You may even choose to leave it open/flat and use a shawl pin or a shawl cuff to connect.
Written pattern for sizes S/M and L/XL.
It also knits up in a pinch on US size 19 needles, almost instant gratification, which of course is always a good thing. You need a darning needle or a crochet hook for seaming the sides together, if you choose to.
